Salade de légumineuses facon southwestern


Note: Préparer la vinaigrette dans un pot pour pouvoir ajouter la quantité désirée. J’ai mis environ les 2/3 de la vinaigrette.

Yield : 4-6 servings


1/2 cup olive oil
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
1/2 teaspoon your favourite hot sauce ou 1/4 de piment jalapeno haché
1 14 ounce can mixed beans, drained and rinsed well
1 cup cooked corn or raw corn sliced off the cob
1 red bell pepper, diced small
1 basket cherry tomatoes, halved
1 Red Onion, thinly sliced
a handful green beans, steamed and cut into bite-sized pieces
a handful yellow wax beans, steamed and cut into bite-sized pieces
a bunch fresh cilantro, minced
a sprinkle or two sea salt and freshly ground pepper


  1. In a festive salad bowl, whisk together the oil, vinegar, mustard and hot sauce.
  2. Add all the other ingredients and toss to combine. Season to taste.
  3. Serve immediately or rest for a few hours.
