{"id":1284,"date":"2023-01-24T17:53:44","date_gmt":"2023-01-24T22:53:44","guid":{"rendered":"https:\/\/recettes.carlrobitaille.org\/?p=1284"},"modified":"2023-01-24T17:54:42","modified_gmt":"2023-01-24T22:54:42","slug":"rogan-josh-curry-dagneau-indien","status":"publish","type":"post","link":"https:\/\/recettes.carlrobitaille.org\/?p=1284","title":{"rendered":"Rogan Josh (curry d&#8217;agneau indien)"},"content":{"rendered":"\n<p><strong>Source<\/strong> : https:\/\/www.recipetineats.com\/rogan-josh\/<\/p>\n\n\n\n<p>Note : Servir avec du riz basmati, pain naan, salade de concombres aux herbes.<\/p>\n\n\n\n<p>Je fais revenir les cubes d&#8217;agneau d&#8217;abord.<\/p>\n\n\n\n<p>Je fais cuire au four \u00e0 325 F pendant 1h45-2h.<\/p>\n\n\n\n<p><strong>Ingredients :<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>3.5&nbsp;tbsp&nbsp;ghee&nbsp;<em>, substitute butter <\/em><\/li>\n\n\n\n<li>1&nbsp;cinnamon stick<\/li>\n\n\n\n<li>6&nbsp;green cardamom pods&nbsp;<em>, lightly bruised<\/em><\/li>\n\n\n\n<li>4&nbsp;cloves<\/li>\n\n\n\n<li>1&nbsp;large onion&nbsp;<em>, finely chopped<\/em><\/li>\n\n\n\n<li>3&nbsp;cloves&nbsp;garlic&nbsp;<em>, finely minced<\/em><\/li>\n\n\n\n<li>1&nbsp;tbsp&nbsp;ginger&nbsp;<em>, finely grated<\/em><\/li>\n\n\n\n<li>5\u00a0tbsp\u00a0<a href=\"https:\/\/www.recipetineats.com\/what-is-tomato-passata\/\">tomato passata<\/a>\u00a0<em>(US: tomato puree\/sauce<\/em>)<\/li>\n\n\n\n<li>1&nbsp;tsp&nbsp;salt<\/li>\n\n\n\n<li>750g\/1.5lb\u00a0boneless lamb shoulder\u00a0<em>, cut into 3cm\/1.2&#8243; cub<\/em>e<\/li>\n\n\n\n<li>1.5 cups \/ 375ml&nbsp;chicken stock&nbsp;<em>, salt reduced (broth)<\/em><\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>SPICES:<\/strong><\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2&nbsp;tbsp&nbsp;paprika&nbsp;<em>, normal or sweet<\/em><\/li>\n\n\n\n<li>3\/4\u00a0tsp\u00a0chilli powder\u00a0<\/li>\n\n\n\n<li>4&nbsp;tsp&nbsp;ground coriander<\/li>\n\n\n\n<li>4&nbsp;tsp&nbsp;ground cumin<\/li>\n\n\n\n<li>2&nbsp;tsp&nbsp;turmeric powder<\/li>\n\n\n\n<li>1\/4&nbsp;tsp&nbsp;nutmeg<\/li>\n\n\n\n<li>1\u00a0tsp\u00a0garam marsala\u00a0<\/li>\n\n\n\n<li>1\/2\u00a0tsp\u00a0fennel powder\u00a0<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>FINISHES<\/strong><\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\/2\u00a0tsp\u00a0extra garam masala\u00a0<\/li>\n\n\n\n<li>1\/2&nbsp;tsp&nbsp;extra fennel powder<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>SERVING\/GARNISH<\/strong><\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\/2 cup \/ 125g&nbsp;plain yoghurt&nbsp;<em>(Greek yogurt fine)<\/em><\/li>\n\n\n\n<li>Chopped coriander leaves, finely shredded ginger, yogurt<\/li>\n\n\n\n<li><a href=\"https:\/\/www.recipetineats.com\/how-to-cook-basmati-rice\/\">Basmati rice<\/a><\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Preparation<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Melt ghee over medium heat in large heavy based pot. Add cinnamon, cardamom and cloves and cook for one minute.<\/li>\n\n\n\n<li>Add onion and cook for 7 minutes, stirring frequently, until pieces are golden and starting the brown on the edges.<\/li>\n\n\n\n<li>Add the garlic and ginger, cook for another minute.<\/li>\n\n\n\n<li>Stir in the Spices, cook for 30 seconds.<\/li>\n\n\n\n<li>Mix in the tomato puree and salt, then add stock and mix.<\/li>\n\n\n\n<li>Add lamb, stir, bring to simmer.<\/li>\n\n\n\n<li>Place lid on and adjust heat to low or medium low so it&#8217;s simmering gently.<\/li>\n\n\n\n<li>Cook 1 hour 45 minutes, giving it an occasional stir, until lamb is quite tender &#8211; use 2 forks to check, it should pry apart pretty easily.<\/li>\n\n\n\n<li>Remove lid, and continue cooking for another 15 minutes (to reduce sauce slightly) &#8211; lamb should be very tender by this stage.<\/li>\n\n\n\n<li>Stir in the Yogurt, the Extra garam marsala and fennel.
