{"id":188,"date":"2011-01-15T16:27:55","date_gmt":"2011-01-15T21:27:55","guid":{"rendered":"http:\/\/recettes.carlrobitaille.org\/?p=188"},"modified":"2012-01-08T23:10:20","modified_gmt":"2012-01-09T04:10:20","slug":"muffins-aux-carottes-gingembre-et-raisins","status":"publish","type":"post","link":"https:\/\/recettes.carlrobitaille.org\/?p=188","title":{"rendered":"Muffins aux carottes, gingembre et raisins"},"content":{"rendered":"<p><strong>Source: <\/strong><a href=\"http:\/\/www.kingarthurflour.com\/shop\/items\/king-arthur-flour-bakers-companion-cookbook\">kingarthurflour.com: King Arthur Flour Baker&#8217;s Companion Cookbook<\/a><\/p>\n<p>18 muffins<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>3 1\/2 cups unbleached all-purpose or cake flour<\/li>\n<li>2 teaspoons baking powder<\/li>\n<li>1\/2 teaspoon baking soda<\/li>\n<li>1 teaspoon salt<\/li>\n<li>8 tablespoons (4 ounces) butter<\/li>\n<li>1 cup sugar<\/li>\n<li>3 large eggs<\/li>\n<li>2 teaspoons vanilla extract<\/li>\n<li>1 cup sour cream<\/li>\n<li>2 cups shredded carrots<\/li>\n<li>1\/2 cup crystallized ginger <span style=\"text-decoration: line-through;\">or minced ginger<\/span><\/li>\n<li>1 1\/2 cups raisins<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li>Preheat the oven to 400 and lightly grease 18 muffin cups <span style=\"text-decoration: line-through;\">or use paper liners<\/span>.<\/li>\n<li>In a medium-sized bowl, whisk together flour, baking powder, baking soda, and salt, then set aside.<\/li>\n<li>In a large mixing bowl, cream the butter and sugar together with a handheld or stand mixer until light and fluffy and almost white in color.<\/li>\n<li>Scrape down the bowl to make sure all the butter in incorporated, then add the eggs, one at a time, beating well after each addition.<\/li>\n<li>Add the vanilla and sour cream and mix until incorporated.<\/li>\n<li>Add the dry ingredients and mix on low speed just until the batter is smooth.<\/li>\n<li>Add shredded carrots, crystallized <span style=\"text-decoration: line-through;\">or minced ginger<\/span> and raisins to the batter before baking.<\/li>\n<li>Fill muffin cups and bake for <del>18 to 24<\/del> 19 minutes, until a cake tester inserted in the center comes out clean.\u00a0 Remove them from the oven, cool in the pan for 5 minutes, then remove the muffins from the pan to finish cooling on a rack.
