{"id":690,"date":"2012-03-09T07:02:22","date_gmt":"2012-03-09T12:02:22","guid":{"rendered":"http:\/\/recettes.carlrobitaille.org\/?p=690"},"modified":"2012-03-09T07:04:21","modified_gmt":"2012-03-09T12:04:21","slug":"sauce-a-la-saucisses-pour-les-gnocchis","status":"publish","type":"post","link":"https:\/\/recettes.carlrobitaille.org\/?p=690","title":{"rendered":"Sauce \u00e0 la saucisses pour les gnocchis"},"content":{"rendered":"<p><strong>Source:<\/strong> http:\/\/www.foodnetwork.com\/recipes\/mario-batali\/gnocchi-alla-ciociaria-ciociaria-style-gnocchi-recipe\/index.html<\/p>\n<p><strong>Notes: <\/strong>Sauce pour accompagner les gnocchis aux patates.<\/p>\n<p>Je ne rajoute pas de sel \u00e9tant donn\u00e9 que la saucisse et le parmesan sont d\u00e9j\u00e0 sal\u00e9s.<\/p>\n<p>Si j&#8217;utilise les gnocchis cuits \u00e0 l&#8221;avance, je les ajoute \u00e0 la sauce 10 minutes avant la fin de la cuisson pour les r\u00e9chauffer dans la sauce.<\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>3 tablespoons <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/olive-oil\/index.html\">extra virgin olive oil<\/a><\/li>\n<li>2 ounces <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/pancetta\/index.html\">pancetta<\/a>, diced (ou 4 tranches de bacon)<\/li>\n<li>2 ounces dried <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/porcini\/index.html\">porcini mushrooms<\/a>, soaked until tender (ou 1\/2 barquette de champignons blancs)<\/li>\n<li>1 <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/garlic\/index.html\">clove garlic<\/a>, finely chopped<\/li>\n<li>1 small onion, finely chopped<\/li>\n<li>1 rib celery, finely chopped<\/li>\n<li>1 carrot, finely chopped<\/li>\n<li><del>1 bunch <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/italian-parsley\/index.html\">Italian parsley<\/a>, finely chopped to yield 1\/4 cup<\/del><\/li>\n<li><del>4<\/del> (5) sweet <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/italian-sausage\/index.html\">Italian sausage<\/a> links, removed from <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/casing\/index.html\">casing<\/a><\/li>\n<li>1 cup red wine<\/li>\n<li>1 (16-ounce) can San Marzano tomatoes (1 pot de 500 ml de tomates en conserve)<\/li>\n<li>1 teaspoon red chili flakes<\/li>\n<li><del>Salt<\/del> and pepper, to taste<\/li>\n<li>Freshly grated pecorino <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/romano\/index.html\">romano<\/a> (ou parmesan)<\/li>\n<\/ul>\n<h2>Directions<\/h2>\n<ol>\n<li>In a 12 to 14-inch skillet, heat the olive oil over high heat until almost smoking. Add the pancetta (bacon), porcini (champignons), garlic, <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/onion\/index.html\">onion<\/a>, <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/celery\/index.html\">celery<\/a>, <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/carrot\/index.html\">carrot<\/a>, <del>parsley<\/del> and the sausage meat and cook over high heat until sausage and vegetables are browned.<\/li>\n<li>Add the red wine, let it evaporate, then add the <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/tomato\/index.html\">tomatoes<\/a> (\u00e9cras\u00e9es) and the pepper flakes.<\/li>\n<li>Adjust the seasoning with <del>salt<\/del> and pepper and lower heat to a <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/simmer\/index.html\">simmer<\/a>. Let cook for 45 minutes.<\/li>\n<li>Meanwhile, bring 6 quarts of water to a boil and add 2 tablespoons salt.<\/li>\n<li>Once the sauce is thickened to the proper consistency, remove the gnocchi from their container and cook in the boiling water until they <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/float\/index.html\">float<\/a> aggressively (4 minutes).<\/li>\n<li>Drain the gnocchi and add to the simmering sauce. Toss very gently over heat 30 seconds to coat, then divide evenly among 4 warmed <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/pasta\/index.html\">pasta<\/a> bowls.
