{"id":795,"date":"2013-05-25T12:20:53","date_gmt":"2013-05-25T16:20:53","guid":{"rendered":"http:\/\/recettes.carlrobitaille.org\/?p=795"},"modified":"2013-05-25T12:21:46","modified_gmt":"2013-05-25T16:21:46","slug":"beurre-citron","status":"publish","type":"post","link":"https:\/\/recettes.carlrobitaille.org\/?p=795","title":{"rendered":"Beurre citron"},"content":{"rendered":"<p><strong>Source : <\/strong>L&#8217;atelier de Daniel V\u00e9zina<\/p>\n<p><strong>Note : <\/strong>J&#8217;ai diminu\u00e9 la quantit\u00e9 de jus \u00e0 un demi citron<\/p>\n<p><strong>Ingr\u00e9dients :<\/strong><\/p>\n<ul id=\"ListeIngredient\">\n<li><del>1<\/del> (1\/2) citron<\/li>\n<li>45 ml (3 c. \u00e0 soupe) d&#8217;eau<\/li>\n<li>125 g (1\/2 tasse) de beurre demi-sel<\/li>\n<li>sel et poivre<\/li>\n<\/ul>\n<p><strong>Pr\u00e9paration :<\/strong><\/p>\n<ol>\n<li>Couper le beurre en petits cubes d&#8217;environ 5 mm de c\u00f4t\u00e9 et le conserver tr\u00e8s froid<\/li>\n<li>Presser le citron<\/li>\n<li>Chauffer une casserole \u00e0 feu tr\u00e8s vif jusqu&#8217;\u00e0 ce que des goutes d&#8217;eau puissent perler et s&#8217;\u00e9vaporer rapidement<\/li>\n<li>Amener les ingr\u00e9dients pr\u00e8s de la casserole<\/li>\n<li>Verser simultan\u00e9ment l&#8217;eau et le beurre. Pendant que tout fume abondamment, brasser \u00e9nergiquement avec un fouet m\u00e9tallique au-dessous de la hotte.
