D\u00e9poser le jambon dans une cocotte.<\/li>\n<li>M\u00e9langer la marmelade et la moutarde s\u00e8che, et badigeonner la viande.<\/li>\n<li>Arroser de sirop d&#8217;\u00e9rable et verser la bi\u00e8re.<\/li>\n<li>Cuisson : de 4 \u00e0 5 heures, cuire les deux premi\u00e8res heures \u00e0 325\u00a0\u00b0F \u00e0 couvert, puis r\u00e9duire \u00e0 300\u00a0\u00b0F pour les 2 \u00e0 3 heures suivantes, en prenant soin d&#8217;arroser r\u00e9guli\u00e8rement.<\/li>\n<li>Le jambon est pr\u00eat lorsque la chair se d\u00e9tache de l&#8217;os et s&#8217;effiloche.<\/li>\n<li>Couper en tranches fines ou en effiloch\u00e9.
